Wedding Wednesday

This past school year, my roommate, Hannah, stumbled upon this wedding proposal video and showed it to her wedding-obsessed roommate, me! We sat there watching it just dying at how cute it was. (And maybe shedding a few tears too!) Anyway, since all weddings begin with a proposal, I thought it would be perfect to share for this week’s Wedding Wednesday!

Almond, Coconut, Cherry Granola

Granola has always been a favorite in our family. Either with milk or yogurt, it is always a delicious breakfast…or lunch…or (if you’re like my mom) dinner!

There are many different kinds of recipes out there, and even already-made packages of granola at the grocery store…but there is just something about homemade granola that makes it just a bit more special! Our favorite recipe is our modified version of Ina Garden’s recipe. It’s quick and easy and tasty!

Almond, Coconut, Cherry Granola

Ingredients

4 cups old fashioned rolled oats

2 cups sweetened, shredded coconut

2 cups sliced almonds

1 ½ cups dried cherries, chopped (I used about ¾ cup because I don’t really like too many. Okay, okay…I forgot to check the amount needed for the recipe before going to the grocery store. Oops!)

½ cup vegetable oil

1/3 cup honey

2 teaspoons ground cinnamon

Directions

Preheat the oven to 350°F

Toss the oats, almonds, and cinnamon together in a large bowl. Toss the coconut and cherries together in a medium bowl. Mix together the vegetable oil and honey. Pour about ¾ of the oil and honey mixture on the oat mixture and the remaining oil and honey on the cherries and coconut mixture. Stir until both mixtures are coated with the liquids. Spread oat mixture onto a baking sheet pan. Bake for about 15 minutes, stirring occasionally. Add the coconut and cherries. Continue to bake for another 10 minutes. Again, stirring occasionally.

Day to Night

I love it when you can find a dress that is so versatile and can easily be transformed from day to night! This white dress, found at Milly & Grace, is the perfect example.

For a daytime look, I paired the dress with sandals, a hot pink bow belt (that I’m obsessed with), a bright necklace, and a tote/beach bag that ties it all together.
